Merry Mouse Sugarplum Cake Recipe

Ingredients

 

12-15 Sugar Plums (in season)

1 1/2 cups cake flour

1 teaspoon baking powder

1/8 teaspoon ground cinnamon

1/2 cup, plus 1 rounded tablespoon, of cornmeal

1/3 cup non-fat milk

1/2 teaspoon vanilla extract

1/2 teaspoon lemon juice (fresh)

12 tablespoons salted butter (softened)

1 cup sugar

3 eggs

Directions

 

1.  Preheat oven to 350 degrees.  Prepare a 10" springform pan by greasing and flouring or using a baking spray.

 

2.  Prepare Sugar Plums by removing pits and cutting into chunks. Please see image to note how carefully Max and Molly Mouse handle the Sugar Plums - you don't want to lose any juice!

 

3.  Blend flour, baking powder, cinnamon and cornmeal, as well as a small pinch of salt, in a medium bowl.  Mama Mouse likes to use a whisk for this task.  Please see image for Mama's cinnamon measuring technique.

 

4.   Stir together milk, vanilla and lemon in a small bowl.  

 

5.  Using a mixer, cream together the sugar and butter until fluffy.  It is great to have a Papa Mouse to help with measuring the sugar.  Add the eggs one at a time, mixing after each egg is added.

 

6.  Add half of the flour mixture to the sugar/egg/butter mixture until combined.  Add all of the milk mixture until combined. Then add the remainder of the flour mixture, until all ingredients are combined.  Stop to  push down the sides of the mixing bowl as needed.  Do not overmix!

 

7.  Spread half of the cake mixture in the pan.  Place half of the Sugar Plums over the mix.  Cover with other half of cake mixture and layer on the remaining Sugar Plums.  Sprinkle the rounded tablespoon of corn meal on top.  

 

8.  Bake approximately 50 minutes until a toothpick comes out  clean.  

 

Best served warm, shortly after removing from oven.  Max and Molly like their cake with vanilla ice cream; Papa Mouse likes his with fresh whipped cream, and Mama likes hers with butter!
